1986 - Today
In 1986, a French-Japanese couple arrived in Paris with a brand-new concept: a revolving counter, colour-coded plates to indicate prices, and Japanese cuisine you help yourself to. The first restaurant opened, and Matsuri became a pioneer of the genre.
In 1988, Matsuri launched sushi home delivery, long before it became the norm.
Then, in 2002, the opening of the rue de Passy restaurant marked the start of an ambitious roll-out: Paris, Lyon, Bordeaux… 12 restaurants opened in just a few years.
BEST OF JAPAN
One ambition: to create the first Japanese sit-down fast casual brand in France.
In late 2023, Adrien de Schompré (former CEO & Partner at Sushi Shop) took over Matsuri, driven by his passion for Japan and his sharp knowledge of the industry. Alongside him, Céleste Velarde (former Art Director at Big Mamma) and Sébastien Blanchet (former PWC) reinvented the brand from top to bottom: bold architecture, modernised recipes, refreshed identity.
Designed to combine speed, quality, pleasure and comfort, this new concept revisits the kaiten experience the French way - making it more contemporary, more indulgent, and always faithful to the Japanese spirit.

Matsuri is a Japanese restaurant with a revolving counter (kaiten) where the dishes travel past you on a conveyor belt, letting you choose your plates freely.
The chefs prepare the dishes live and place them on the conveyor belt. All you have to do is help yourself to whatever you fancy from the plates going past you.
Yes, all our products are prepared on site every day by our chefs. The fish is carefully selected and the ingredients are impeccably fresh.
